The menu, designed by our executive chef José Miguel Nuño, is frequently renewed, looking for raw materials from local and nearby producers, always with the idea of being as environmentally friendly as possible.

It’s worth noting that the suppliers are not only chosen for their proximity and the quality of their products, but also for their commitment to the environment and sustainability. A notable example is the fish and seafood we purchase daily directly from the local fish market across the road, as well as other sources such as bass and sea bream from estuaries and tuna from the almadraba (age-old sustainable form of fishing) of Barbate.
