Jerez has been recognised as the Gastronomic Capital 2026, a milestone that celebrates the culinary richness, tradition and creativity of our land. At Aq35 we are joining this historic year with a proposal designed to pay tribute to Jerez through both food and wine, throughout all twelve months of the year.
Throughout 2026 we will be offering an exclusive Pairing Menu, available all year round, where each creation is paired with a carefully selected range of wines and fortified wines from the Jerez region. A gastronomic journey that highlights local produce, seasonality and our contemporary vision of Andalusian cuisine, always with respect for its essence.
In addition, each month we will present a special dish, created especially for this celebration. Twelve unique, ephemeral dishes inspired by the season, by the produce of Cádiz and by the culinary history of Jerez. An invitation to return, to discover and to be surprised month after month.
