erez has been recognised as Gastronomic Capital 2026, a milestone that celebrates the culinary richness, tradition and creativity of our region. At Aq35 we are celebrating this historic year with a proposal that pays tribute to Jerez through food and drink all year round.
During 2026, we will offer an exclusive Pairing Menu, available throughout the year, where each dish is paired with a careful selection of wines and fortified wines from the Jerez region. A gastronomic journey that highlights local ingredients, seasonality and our contemporary vision of Andalusian cuisine, always respecting its essence.
In addition, each month we will present a special dish, specially created for this celebration. Twelve unique, ephemeral dishes inspired by the season, the Cadiz pantry and the culinary history of Jerez. An invitation to keep coming back, discovering and surprising yourself month after month.
