The suppliers, in addition to being selected for the proximity and quality of their products, are chosen for their commitment to sustainability and respect for their environment, highlighting the fish and seafood from sustainable fishing and purchased daily directly from local fishermen from the fish market located directly opposite, as well as other sources such as sea bass and sea bream from estuaries and tuna from the almadraba (ecological fishing gear and millennial origin) of Barbate.

They are used not only to prepare traditional recipes such as Urta a la Roteña, but also to take the cuisine and fuse it with the best of Asian cuisine (tartar, wok, etc.), South American (cebiches, tiraditos, etc.). 

The rice dishes deserve a special mention, highlighting the mellow seafood and fish.
